Vegetarian Dishes to Make with Your Wholesale Chimichurri

Chimichurri is traditionally used as a marinade and topping for meats. But if you buy it in wholesale quantities, you may be looking for some ways to use up the extra in some meatless meals. The following vegetarian dishes, made with chimichurri, are good places to start.

Roasted Root Veggies With Chimichurri

This dish is a filling choice for a cool winter night. You can serve it alongside some nice, toasty bread and butter for an extra special meal. You'll need:

  • 2 medium red potatoes
  • 2 medium carrots
  • 2 parsnips
  • 1 large sweet potato
  • 2 tablespoons canola oil
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 cup chimichurri

Peel the carrots, potatoes, parsnips, and sweet potatoes, and cut them into approximately 1/2-inch cubes. Spread the veggies out on a baking sheet, and toss them in the canola oil. Sprinkle the garlic, paprika, and kosher salt over the veggies. Roast them for 375 degrees F for 30 minutes, turning them over once during roasting. 

Let the veggies cool for a few minutes on the baking sheet, and then transfer them to a serving dish. Drizzle the chimichurri over the top, and toss the veggies to coat them. Serve, and enjoy!

3-Veggie Grilled Cheese With Chimichurri

When you want a quick meal or one that you can eat on the go, this grilled cheese is a great option. If you want to make it vegan, rather than vegetarian, then you can just substitute your favorite plant-based cheese for the cheddar. You'll need:

  • 2 slices of white bread
  • 2 teaspoons butter or margarine
  • 2 1-ounce slices of cheddar cheese or plant-based cheese
  • 1 slice tomato
  • 2 tablespoons red pepper, chopped
  • 1 green onion, chopped
  • 2 tablespoons chimichurri

Butter the bread. Place one piece butter-side down in a skillet. Layer on the cheese, followed by the pepper, onion, and tomato. Drizzle the chimichurri over the vegetables, and place the second piece of bread on top with the butter facing upward. Bring the heat up to medium, and cook until the first side is lightly browned. Flip the sandwich over, and cook the other side until toasted. Let cool slightly before you eat it.

You can make modifications to both of these recipes as you please, in order to suit your own tastes. Both of them are good options for using up your extra, chimichurri wholesale when you don't want to use meat.
